Pepper and Cabbage Slaw Recipe
Servings 10 to 12
1. lemon or lime juiced
1/4 cup olive oil
3 TB balsamic vinegar
1 small red onion
1 or 2 fresh garlic cloves minced
2 or 3 tsp minced ginger
1 small chili pepper de-seeded and diced
1/4 cup chopped fresh chives
1/4 tsp black pepper
1/2 cabbage cut into thin slivers
9 small sweet bell peppers de-seeded and sliced in thin strips
1 large green bell pepper de-seeded and sliced in thin strips
1 medium cucumber diced
1 large carrot peeled and diced
1 Cup cherry tomatoes, quartered
1 cup golden pear tomatoes cut in half
1 large ripe avocado, diced
1 cup dried cranberries or strawberries " optional"
In a large serving bowl, whisk together the juice, oil and vinegar. Add the onions, garlic, ginger, chili, pepper, chives. Mix well then add the carrots and cucumber and mix again.
Add the remaining ingredients and mix gently. You may garnish with almonds or pecans.
Keep cool until serving.
